Cabbage Soup

I’ve been obsessing lately over The Mediterranean Dish.

I can actually eat most of her recipes, which feels like a small miracle these days, and they're so good. I've been focusing on eating lots of fiber and whole foods, with only occasional organic chicken and high-quality fish. Her recipes are packed with vegetables, beans, and fresh ingredients, but somehow they still feel comforting and satisfying instead of restrictive.

Easy Prep

This is the kind of recipe I love: quick to prep, easy to throw together in a Dutch oven, and ready in about 20 minutes. The leftovers are even better after a night in the refrigerator. And the finishing touch (A Mediterrian Dish Special) a squeeze of lemon and fresh parsley, brightens the whole pot and makes it taste like something much fancier than a humble cabbage soup.
